  • 10 g 6 g for the tofu and 4 g for the vegetables
  • 30 g Peanut butter
  • 30 g Sesame oil

  • 20 g Brown sugar
  • 10 g Minced ginger
  • 20 g You can use Sriracha
  • 20 g Chopped
  • 20 g Warm water

Preparation

  1. Start cooking the brown rice in a separate saucepan according to the packaging, usually 40–45 minutes. Meanwhile, drain and pat the tofu dry, cut into 2.5 cm cubes and gently toss with 20 g soy sauce and 7 g finely chopped garlic.
  2. Heat 6 g olive oil in a large non-stick frying pan over medium-high heat. Brown the tofu for about 6–8 minutes, turning gently, then transfer to a plate. Time the stir-fry to finish as the rice is ready.
  3. Add the remaining 4 g olive oil to the pan. Add the chopped onion and small cauliflower florets and stir-fry for 3–4 minutes.
  4. Add the asparagus and pepper, cut into bite-sized pieces. Stir-fry for another 5–7 minutes, until tender but still slightly crisp.
  5. Meanwhile, whisk the remaining 40 g soy sauce and 5 g garlic with the peanut butter, warm water, sesame oil, vinegar, brown sugar, finely chopped ginger and ketchup. Sriracha can replace the ketchup if preferred.
  6. Return the tofu to the pan, add the sauce and gently stir over low heat for 1–2 minutes, until everything is hot and coated. Remove from the heat.
  7. When the rice is tender, drain any excess water and let it rest covered for 5 minutes. Fluff with a fork and serve with the tofu and vegetables, topped with chopped peanuts. If the rice is already cooked, reheat it thoroughly and allow about 20 minutes for the stir-fry alone.
  8. You can vary the vegetables, for example by using mangetout, broccoli or mushrooms.
