Let's talk about tofu
What is tofu? How to prepare and cook? It's the only option to eat protein?

What is tofu?
Tofu is a kind of cheese obtained from soybeans, a legume. It is therefore rich in vegetable protein. But also, in:
Omega-3 fatty acids
Calcium
Phosphor
Magnesium
Sodium
It has a neutral flavor and therefore can be used in various recipes and in different ways, including desserts.
You can find natural tofu, which can be seasoned in the same way as meat and fish are seasoned (with salt, pepper, oregano, lemon juice…). And when marinated it absorbs the flavors even more.
There is also smoked tofu which, as the name implies, has more salt, and has a more refined flavor. Both options can be included in the diet, smoked tofu should be moderate because of salt levels.
In addition, we managed to find soft tofu, firm and extra firm tofu. The first one is ideal for sauces and desserts, because it can be easily crushed and creates a cream. The firm versions are ideal for baking, sautéing, or grilling.
Does a vegan diet have to be based on soy and tofu?
The answer is no!! Soy and its derivatives, such as tofu, are often included as a vegetable protein. But they are not the only source of protein. There are other legumes (lentils, chickpeas, beans, peas...) and even seitan.
How to conserve?
Check the expiration date on the label is the first step. After opening, wash the tofu and store it in the cold, changing the water every day. In this way you can be preserved for 1 week.
You can also cook or store in the cold (meals prep it’s an excellent idea to used and do not waste it).
Freezing tofu is not advised as it will lose its texture.
How to season?
As it has a neutral flavor, the seasonings are what will give it flavor. Marinades can be made, for example with lemon juice, spices (pepper, garlic...), pesto and soy sauce. Or added to side dishes that already have a characteristic flavor, for example curry and preparing a tofu curry.
